3 or 4 days of great eats start with Cuban-style Picadillo with Perfect Rice On day one, prepare the Picadillo and rice.   Make extra; you can either label leftovers and freeze, or continue for almost a week of easy morphs.  Forget freezing plain rice; it doesn't do anything for either texture or flavor.  Even mixed with other food, it's a disaster.

  1. Burritos with some drained Picadillo, add chopped veggies such as ripe tomato, lettuce, shreds of onion or chopped green onion, shredded low-fat or fat-free cheese, salsa, sliced avocado....  I enjoy a dollop of low-fat or fat-free sour cream.
  2. Add a couple of cans of Kidney beans, a can of tomato sauce and some chili powder for a delicious chili con carne.
  3. Sauté a little more chopped onion and green (and red) bell pepper.  Chopped celery or jalapenos if desired.  When nearly done, add some minced garlic or garlic powder.  Add a 15-oz. can of stewed tomatoes, or some leftover canned tomatoes or tomato sauce.  Heat the rice in the microwave, and add to chopped veggies.  Add some picadillo, stir, and instant Spanish Rice!
  4. Add a can of tomato sauce and a handful or two of low-fat or fat-free cheddar cheese.  This makes an alternative to Johnny Marzetti . Cook until cheese and tomato make a creamy sauce.
