Make a Puffy Omelet

An interesting variation on the standard omelet is a puffy omelet.  I like to stick tomato wedges in the top of mine.  Instead of the oven, I spray the top with cooking spray, put a plate over the omelet and turn it out, then turn it back into the skillet, uncooked side down.  It's not hard to do, either way.
