Apple-Pear Crisp

3 small Granny Smith apples (or 2 very lg.)
2 pears, ripe but not soft
1/3 C. raisins
1/4 tsp.
almond extract
1 lemon
1/2 C. brown sugar
1/2 tsp. ground
allspice
1/4 tsp.
cinnamon
2 Tbsp. white sugar
dash of
salt
1/2 C. old-fashioned oatmeal
1/4 C. almonds, ground
1/3 C. unbleached flour
3 Tbsp. margarine, non-hydrogenated, lite or regular

cooking spray

Preheat oven to 350°.  Spray a 6-cup casserole with cooking spray. Use lemon for 2 tsp. lemon zest, and juice for 3 Tbsp. lemon juice.  Peel and core apples, and chop.  Sprinkle with lemon juice and mix to coat.  Peel and chop pears, and mix with apples, lemon zest and raisins.  Arrange in the bottom of the casserole. Combine brown sugar, allspice and cinnamon.  Sprinkle evenly over fruit.   Combine white sugar, ground almonds, oats, flour and salt in a small bowl; cut in the margarine, or rub in with fingertips.  Sprinkle over fruit mixture.  Spray top with more cooking spray.

Bake until the fruit is tender, about 25 to 30 minutes.  Serve warm;, plain, or with milk, ice cream or whipped topping.
