Beverly Hills Cafe Meatloaf

The famous recipe from the Beverly Hills Cafe makes two generous meatloaves; you can freeze one, or slice when cold for sandwiches.  My favorite meatloaf sandwich is mayonnaise and a generous dose of chili sauce on white Italian-style bread.  Many like it with mustard, or more horseradish.  It's an easy recipe to cut in half for small families.  Delicious served with mashed potatoes or baked potato wedges. 

2 1/2 lb. ground beef
2 eggs
1 1/2 tsp. horseradish
1/2 C. tomato sauce
1 Tbsp. dry mustard
1 tsp. salt
1 tsp. black pepper
Accent to taste (optional)
1/2 tsp. granulated garlic
1 1/2 C. seasoned bread crumbs
1/2 C. diced onion
3 Tbsp. diced celery
3 Tbsp. diced bell pepper

Preheat oven to 300º F.  Place the ground beef in a bowl, and break into small pieces with a fork.  Add eggs, horseradish, tomato sauce and mix well.  Add bread crumbs and dry seasonings, and mix again.  Add diced onion, celery and bell pepper, and continue mixing until everything is well incorporated.

Divide mixture and pat into two loaf pans, pressing down to make it even.  Cover with foil.  Bake for 50 minutes.  Check the center to make sure the meat is cooked.  Drain if needed before serving.   Makes about 12 servings.
