Cajun Style Salmon Fillets for 4

4  4-oz salmon fillets
2 Tbsp olive oil
2 Tbsp Cajun seasoning
2 cloves garlic, minced
1/4 cup apple cider (or juice)
1/4 cup balsamic vinegar
1 Tbsp chopped parsley or 1-1/2 t.
dried parsley
pinch of sugar
Lemon wedges

Place olive oil in heavy skillet over medium-high heat.  When hot, add salmon.  Brown for about 2 minutes on each side.  Remove and keep warm.

Add Cajun seasoning and garlic to the pan.  Sauté for 1 to 2 minutes, stirring constantly, until garlic just starts to turn golden.  Add apple cider, balsamic vinegar, dried parsley and sugar.   Cook for 2 or 3 minutes, stirring and deglazing the pan.  Return salmon to pan on medium heat and cook, turning once, just until it flakes when tested with a fork.  Serve with lemon wedges.
