Chicken is economical, and a healthier choice than red meat when prepared in a lower calorie fashion - in other words, not deep fried.  For family compliance, however, we need to vary the ways of serving.  Chicken breasts are an especially good pick; lean and fast cooking.  This recipe makes use of leftover roast chicken, or poached chicken breasts.

Chicken Pecan Sandwiches

leftover roast chicken, or poached chicken breasts
whole wheat or other whole grain bread
cream cheese, low fat or fat free
crushed pineapple
mayonnaise or Miracle whip, low fat
lettuce or salad mix
pecans

Set the cream cheese out to soften.  When softened, add a couple of tablespoons of drained, crushed pineapple and mix well.

Spread cream cheese mixture liberally on half the bread.  Chop or crush the pecans (you can put them in a baggie and whack with a can or rolling pin).  Sprinkle liberally on the cream cheese.  Add thin slices of chicken, then lettuce leaves or salad mix.  Spread the rest of the bread with mayonnaise or Miracle Whip and top off the sandwich.
