A mixture of chopped aromatic herbs, fresh or dried, is called Fines Herbes, and is a must in French cuisine.  It can be used to flavor soups, dishes with meat, cheese and veggies and especially to give flavor to omelets.  Fresh fines herbes require broad-leaf parsley, chives and chervil and often others to taste; washed, dried and chopped fine.   This dried mixture can be used if those fresh ones aren't available.

Fines Herbes

1 Tablespoon dried parsley
1 Tablespoon
dried basil
1 Tablespoon
dried thyme
1 teaspoon
dried tarragon
1 teaspoon dried grated lemon peel
a pinch of
sage

Mix herbs and lemon peel.  Store in an airtight jar.  Keep in a cool, dry and preferably dark place (not over the stove, please!).
