ChefAl of Great World Chefs has responded to Susan's request for a cake her mother used to make.  This is not baked in a tube; it calls for three 8" layers.  A great icing to use would be White Mountain.  But be forewarned;  this cake is not for those on low-fat or low-cholesterol diets!

Golden Glory Cake

Preheat oven to 375° F.

4 1/2 cups cake flour 
4 tsp.
baking powder 
1 1/2 tsp.
salt 
1 cup margarine 
2 2/3 cup sugar 
1 1/2 cup canned unsweetened pineapple juice 
4 egg yolks 
1 1/2 tsp.
vanilla extract
4 egg whites
1 tsp.
pineapple extract  (optional)

Sift flour.  Measure and sift again with the
baking powder and salt.

Cream margarine with 2 cups sugar and 2 tablespoons pineapple juice until light and fluffy. Add unbeaten egg yolks and beat well.  Add extract(s). Mix until smooth.

Alternately add the flour mixture and the rest of the pineapple juice, mixing just until combined.

Beat egg whites until stiff but not dry. Add remaining sugar and beat until it just disappears.   Gently fold in the batter just until well mixed.

Bake in three 8 inch layers for 25 to 30 minutes.
