This delicious salad is better when you make it several hours before and chill it thoroughly.   It's a great choice for a Halloween party.  It's economical, tastes great and you can rename it "Worms and Eyeballs".

Macaroni & Tuna Salad

16 oz package of large elbow macaroni
3/4 cup reduced fat (lite) mayonnaise
1 teaspoon sugar
1 teaspoon poppy seeds, OR 1/2 teaspoon
celery seed
3/4 cup finely chopped celery
1 can tuna, drained  (Note)
2 large firm red delicious apples, unpeeled
1 tablespoon lemon juice
1 1/2 cups seedless grapes OR
        1/2 cup raisins, soaked in hot water, then drained  (Note #2)

Cook macaroni according to package directions. When done, cool it in several changes of cold water, then drain thoroughly.

Mix the mayonnaise, sugar, poppy seeds, chopped celery and tuna.  Add the drained macaroni, folding until combined.

Core the apples.  Cut into 1/2 inch cubes.  Immediately add the lemon juice and stir to mix.  Cut the grapes in half (for Halloween, leave them whole to make the eyeballs).  Add to the macaroni,  folding gently.  

Taste; you may wish to add more mayonnaise.

Note:  You may add a second can of tuna if you wish.    Tuna packed in water is much lower in fat and calories.  Tuna packed in vegetable oil, however, when well-drained, has less cholesterol.

Note #2:  You may wish to eliminate the raisins or grapes for a more classic version.   Some people prefer to skip the celery seed or poppy seeds, also.
