Try these easy but fancy-looking eggs for breakfast or lunch.  

Puffy Eggs

Preheat oven to 350° F.   Spray a baking sheet with cooking spray.

bread slices, lightly toasted   (Note #1)
cheese slices, reduced fat or fat free
eggs, separated
salt
black pepper or
paprika

For each serving, lay a slice of toast on the baking sheet.  Cover with a slice of cheese.   (Note #2)

Beat egg whites until stiff.  Spoon atop the slices of cheese.  

Make an indentation in the center of each one.  Carefully place an egg yolk in the hollow.   Sprinkle lightly with salt or salt substitute, and either black pepper or paprika to taste.

Bake for 15 minutes and serve immediately.


Note #1:  for greater nutrition, use "wheat" or whole wheat bread.  If desired, and fat-free isn't a concern, lightly "butter" the toast or spray with cooking spray before applying the cheese.  You may also put a dot of butter or non-hydrogenated margarine atop the egg yolk for higher flavor.

Note #2:  as a variation, place some chopped sandwich ham on top the cheese, or a little crumbled cooked bacon.   Don't completely cover the cheese!
