Salmon and Black Bean Loaf

16 oz. can salmon
4 - 5 slices whole wheat bread, made into fine crumbs
2 eggs, slightly beaten
2 Tbsp. dry butter buds
2 Tbsp. fresh lemon juice
2 dashes Tabasco
1/4 cup cilantro,  finely chopped
1 can black beans, about half drained
1 Tbsp. garlic, finely chopped
1/2 cup onion, finely chopped
freshly ground black pepper

Preheat oven to 325° F.

Put eggs, butter buds, lemon juice and black beans into a food processor and blend well.  Add garlic, onion and cilantro and blend. 

Dump salmon, juice, bones and all, into a large bowl and flake well.  Add bean mixture, then bread crumbs, and stir well.  This will be very 'wet'.

Put in a well oiled load pan.  Bake for 60 to 75 minutes.  Let it sit 15 minutes before cutting, to firm up, or it won't come out of the pan easily at all.
