From Virginia Wiedemann: "We all know that we should eat more fish. Ah, but not just any kind of fish! Fish high in Omega 3 Fatty Acids are the kind to eat! If this is too confusing, just think 'Salmon'." Salmon and Black Bean Loaf 16 oz. can salmon4 - 5 slices whole wheat bread, made into fine crumbs 2 eggs, slightly beaten 2 Tbsp. dry butter buds 2 Tbsp. fresh lemon juice 2 dashes Tabasco 1/4 cup cilantro, finely chopped 1 can black beans, about half drained 1 Tbsp. garlic, finely chopped 1/2 cup onion, finely chopped freshly ground black pepper Preheat oven to 325° F. Put eggs, butter buds, lemon juice and black beans into a food processor and blend well. Add garlic, onion and cilantro and blend. Dump salmon, juice, bones and all, into a large bowl and flake well. Add bean mixture, then bread crumbs, and stir well. This will be very 'wet'.
