Salmon Pot Pie

1 lb. frozen mixed vegetables
16 oz. can salmon
Low-fat Bisquick
Low-fat milk

White sauce:
1 can evaporated milk or 16 oz. no-fat half and half
3 Tbsp. whole wheat flour
1 Tbsp. dry butter buds
1 Tbsp. chicken broth granules
dash Tabasco
2 Tbsp. chopped chives
1/4 cup dry white wine
salt and pepper to taste
oven spray

Preheat oven to 375° F.

Cook a one pound bag of mixed vegetables and drain. Stir all white sauce ingredients together with wire whisk; cook over medium heat stirring constantly until sauce thickens.  Add cooked vegetables. Add one drained 16 oz. can salmon.  Mix well and pour into sprayed casserole.

Top with "dumplings" made from low fat Bisquick and low fat milk. Bake for about 20 minutes or until "crust" of dumplings is done.
