From Virginia Wiedemann: "How many ways can you eat salmon? Ever try a pot pie? It's kind of good, actually." Salmon Pot Pie 1 lb. frozen mixed vegetables16 oz. can salmon Low-fat Bisquick Low-fat milk White sauce: 1 can evaporated milk or 16 oz. no-fat half and half 3 Tbsp. whole wheat flour 1 Tbsp. dry butter buds 1 Tbsp. chicken broth granules dash Tabasco 2 Tbsp. chopped chives 1/4 cup dry white wine salt and pepper to taste oven spray Preheat oven to 375° F. Cook a one pound bag of mixed vegetables and drain. Stir all white sauce ingredients together with wire whisk; cook over medium heat stirring constantly until sauce thickens. Add cooked vegetables. Add one drained 16 oz. can salmon. Mix well and pour into sprayed casserole.
