Who says that snacks are unhealthy? Not me! Check out this healthy salsa. Great for low-fat tortilla chips, on burgers or burritos, or as a sauce with meat. Try a big spoonful on scrambled eggs, tucked into a tortilla.
Salsa Fresca
4 medium very ripe tomatoes
1/2 small red onion, minced
1 to 2 fresh jalapeņo peppers
2 Tbsp. fresh cilantro leaves, chopped
or 2 tsp.
dried cilantro if fresh is unavailable
1 Tbsp. lime or lemon juice
1 Tbsp. good olive oil
salt to taste
Wash and stem the tomatoes. You may seed them, and even peel if you wish; however be aware that the seeds and skins have many nutrients. Chop into small dice. Place in a colander over a bowl to drain.
Mince the onion finely. Seed and mince the jalapeņo; you may use seeds also if you like it really, really hot! Finely chop the cilantro leaves. Add drained tomatoes; discard the juice. Add lime juice and oil, and salt lightly to taste. Be aware that chips and other foods are often salted, so do not over-salt.
