This delicious tomato recipe is excellent served with chops, steaks, fish or summer salad. Tomatoes and garlic in combination provide loads of nutrition: lycopene, vitamins and antioxidants!

Grilled Garlic Tomatoes


1/4 cup mayonnaise (low fat may be substituted)
3 garlic cloves, minced
1 tablespoon lemon or lime juice
freshly ground pepper
2 large tomatoes, cored and halved
Olive oil or
cooking spray
salt
paprika (optional)

Whisk together mayonnaise, garlic and lemon juice. Set aside. Preheat grill or broiler. Brush tomatoes with oil or spray generously with cooking spray.  Sprinkle with salt and grill for broil with the cut side to flame.  Cover, if grilling, and cook until hot and juicy, about 4 minutes.

Transfer to serving plate.  Spread with a spoonful of the garlicky mayonnaise and garnish with black pepper and/or a sprinkle of paprika.  Serve hot.
