In an attempt to make natural peanut butter work and taste better, even if you keep it in the refrigerator, I came up with this version.  See  Peanuttiest Solution?   I made this with the 1 lb. jar of Smucker's Natural Creamy which contains only ground peanuts and salt.

Whipped Peanut Butter

1 pound natural peanut butter or fresh ground peanuts
Stevia or other sweetener
Olive oil 

Place peanut butter in a small deep bowl.  Using an electric beater on low speed, beat until oil is mixed in.  Add olive oil a tablespoon at a time, increasing the beating speed.  I used about 1 1/2 to 3 teaspoons.  Add a small amount of sweetener to taste.  Beat some more on very high speed until peanut butter is creamy and light.

Put as much as you can back in the jar, and either eat the rest or put it into another small container.  Store in the refrigerator.
