Hello,
I'm looking for a recipe for Carrot Cake in a Tupperware cookbook from about 1979. The cookbook was given to New Reps back then. My neighobor who was a Rep. let me copy the recipe, I have since then lost it.

Carrot Cake from Tupperware, Pg. 31 Fast & Fresh Tupperware Cookbook
1 1/2 cups flour
2 1/2 tsps. ground cinnamon
1 1/2 tsps. baking soda
1 tsp. ground nutmeg
1/2 tsp. salt 1 1/2 cups sugar
1 cup vegetable oil
3 eggs
3 cups grated fresh carrots
1 cup chopped walnuts
1/2 cup golden raisins
Cream Cheese Frosting (recipe follows)
1. In bowl, stir flour, cinnamon , soda, nutmeg & salt.
2. In large bowl, with mixer at high speed, beat sugar, oil, & eggs. Stir in Carrots, walnuts & raisins, then fold in flour mixture until combined.
3. Pour into 3 -quart casserole with cone in center. Cook on Medium(50%) 18-22 minutes, turning pan twice, if necessary until cake pulls away from side of pan & wooden pick inserted near center comes out clean.
4. Let cake stand directly on countertop 10 minutes, then invert onto serving plate, remove cone. Cool before frosting.
Cream Cheese Frosting:
In large bowl, with mixer at high speed, combine 1 pkg.(3oz.) softened cream cheese, 1/4 cup softened butter or margarine & 1 tsp. vanilla. Beat in 1 1/2 cups cups sifted confectioner's sugar and 2 - 4 Tbs. milk until mixture is spreadable.
