Cornish Game Hens with Rosemary Marinade

     

2 Cornish game hens
salt
pepper
Rosemary Marinade  (see at bottom)

  • Rinse and dry the Cornish game hens.  Rub the cavities with salt and pepper.   Place in the Tupperware® Season-Serve Container.  Cover with Rosemary Marinade and put in the refrigerator for four hours, turning over the Season-Serve Container frequently.

  • Remove the hens from the Season-Serve.   Place half the rosemary inside the cavity of each hen, and then discard the marinade.  Place the hens in the Ovenworks 3-quart Oval Casserole, with the breasts down and the legs toward the center.   Cook uncovered in the microwave, on high, for 9 minutes.  Turn the hens over and cover the points of the wings and drumsticks with aluminum foil.  Continue to microwave on high for 9 to 11 minutes more, until the juices run clear.   Place in a 450F pre-heated standard oven for 10 to 12 minutes, until the skin of the hens turns golden brown.  Remove from oven and leave set for 5 minutes.  

Rosemary Marinade

1/4 cup white wine vinegar
1/4 cup vegetable oil
1/4 cup lemon juice
1/2 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon black pepper, coarsely ground
1 or 2 sprigs of rosemary

Combine all ingredients in the Quick Shake Container.  Use to marinate poultry, beef or pork.
