Seafood Pilaf

      

2 Tablespoons butter
1 medium onion, chopped
1 green bell pepper, chopped
2 Tablespoons fresh parsley, chopped
1 cup long grain rice
2 cups chicken broth
1 teaspoon ground black pepper
1 dozen cooked clams in shells
1 lb. cooked shrimp or small lobster tails

Place butter, onion, peppers and parley into Oval Microwave Cooker. Cover and microwave on high 2 to 3 minutes until butter is melted and vegetables are tender crisp.  Stir in the rice, broth and pepper.  Cover and cook on high for 6 minutes until broth boils.  Then cook on medium for 10 minutes more until most of the liquid has been absorbed and the rice is tender.  Arrange seafood pieces on top of the rice and place in a preheated 300F oven for 8 to 10 minutes until the seafood is piping hot and the rest of the broth has been absorbed.  Garnish and serve.
