Watkins Cooking Spray

Topping:
2 Tbsp./30 mL brown sugar
1/4 tsp./1.2 mL Watkins Apple Bake Seasoning
1/8 tsp./0.6 mL Watkins Pumpkin Pie Spice

Muffins:
1 cup /250 mL whole-wheat pastry flour
1/2 cup /125 mL all-purpose flour
1 cup /250 mL bran-flakes cereal
1 Tbsp./15 mL Watkins Baking Powder
1/2 tsp./2.5 mL baking soda
1-1/2 tsp./7.5 mL Watkins Apple Bake Seasoning
1/2 tsp./2.5 mL Watkins Ground Cloves
1-1/4 cups /300 mL applesauce
4 egg whites
1/2 cup /80 mL honey
2 Tbsp /30 mL Watkins Grapeseed Oil
1 medium Granny Smith apple, peeled and shredded

Preheat oven to 425° F /220 C.  Coat 12 muffin cups with Watkins Cooking Spray.   In small bowl or cup, mix together brown sugar, 1/4 tsp Watkins Apple Bake Seasoning and Watkins Pumpkin Pie Spice.  Set aside.

In large bowl, combine flours, cereal, baking powder, baking soda, 1-1/2 tsp Apple Bake Seasoning and cloves.  In medium bowl, whisk together applesauce, egg whites, honey and grapeseed oil.  Stir in apples.  Pour over flour and spice mixture.   Stir with a rubber spatula until the flour is just moistened; do not overmix.   Divide the batter among the muffin cups.  Sprinkle each muffin with brown sugar and spice mixture. Bake for 20 minutes.  Makes 12 muffins.
