Jerk Chicken Pizza
with Tropical Salsa

    

1 package (7-oz/198 g) Watkins Whole Wheat Pizza Crust Mix
2 skinless, boneless chicken breast halves, cut into very thin strips
1-1/2 Tablespoons/25 mL Watkins Caribbean Spice Rub
1 Tablespoon/15 mL Watkins Original Grapeseed Oil
1 cup/250 ML sliced Shiitake mushrooms
1/2 cup/125 mL sliced onion
1/3 cup/80 mL tomato sauce
3 Tablespoons/45 mL Watkins Tropical Salsa
1/2 cup/125 mL shredded mozzarella cheese
1/2 cup/125 mL shredded Provolone or smoked mozzarella cheese

Prepare pizza crust according to package directions.  Meanwhile, toss chicken strips with spice rub; sauté in oil until done.  Remove chicken from pan and sauté mushrooms for 1 minute in pan drippings; set aside.  Combine tomato sauce and Tropical Salsa.  Spread this mixture on top of prepared crust.  Top with chicken, mushrooms and cheeses.  Bake at 450 F/235 C for 12 to 14 minutes or until crust and cheese are golden brown.  Makes 6 servings.
