Oatmeal Crispies

    

1 cup/250 mL vegetable shortening
1 cup/250 mL brown sugar
1 cup/250 mL granulated sugar
2 eggs, beaten
1 Tablespoon/15 mL hot water
1 teaspoon/5 mL Watkins Pure Vanilla Extract
1 teaspoon/5 mL Watkins Butter Pecan Extract
1 teaspoon/5 mL Watkins Vanilla Nut Extract
1-1/2 cups/275 mL all-purpose flour
1 teaspoon/5 mL baking soda
1 teaspoon/5 mL salt, if desired
3 cups/750 mL uncooked rolled oats
1/2 cup/125 mL chocolate chips

In large mixing bowl, cream together shortening and sugars.  Stir in eggs, water and extracts.  Sift together flour, soda and salt; beat into mixture.  Stir in oats and chocolate chips.  Drop by teaspoonsful onto baking sheet that has been coated with Watkins Cooking Spray.   Bake at 350F/180C for 12 to 15 minutes.  Makes 7 dozen cookies.
